Clover Bliss Smores Cookies

It’s chocolately and crunchy and it’s a perfect for a night snack.

Serves: 4-5

200g butter
¾ cup brown sugar
¼ cup white sugar
1 tsp vanilla essence
1 egg
2 cups flour
1 tsp bicarb
pinch of salt
1 cup chocolate chips
2 cups marshmallows or 1 cup marshmallow fluff

Preheat the oven to 180C.
Cream the butter and sugar together in a large mixing bowl. Stir in the vanilla essence and egg, mix until combined
Into another bowl, combine the flour, bicarb and salt and mix, then fold in the chocolate chips.
Cover the dough and allow to rest in the fridge for 20 minutes.
Divide the dough into balls and place onto a lined baking tray. Press into cookie shape and bake for 8-10 minutes. Top with marshmallows or marshmallow fluff whilst still warm. Blow torch the marshmallows or place under a hot grill oven for 30 seconds, until slightly toasted. Pour over the Clover Bliss Chocolate dessert when serving.

Chefs Tip: Make a big batch of the cookie dough and freeze it for, to have a sweet treat ready on hand.
