Clover Butro Bagel Pangrattato Pasta

When it comes to meat free Mondays, a pasta dish of some sort often makes it to the menu. And if you love crunchy, savoury breadcrumbs on a creamy pasta then  Bagel Pangrattato pasta is the dish for you.

Ingredients:

1 bagel, thinly sliced and toasted
Clover Butro Spread
1 tsp dried mixed herbs
½ cup grated parmesan
Zest of 1 lemon
Salt and lemon peppe to taste
300g cooked spaghetti
1 onion, chopped
2 cloves garlic, chopped
1 tbsp chilli flakes
200g cream cheese
½ cup vegetable stock
¼ cup capers
1 cup cherry tomatoes

Method:

Preheat the oven to 180C.
Prepare the pangratto by generously spreading the Clover Butro. Bake in the oven for 10-15 minutes or until golden brown and crush into breadcrumbs. Add the toasted crumbs to a bowl and combine with mixed herbs, parmesan, zest of 1 lemon and season with salt and lemon pepper.

Prepare the pasta by melting Clover Butro on a pan and sauté the onion and garlic until the onion is lightly browned. Stir in the chilli flakes, cream cheese, stock, cherry tomatoes and capers. Season with salt and pepper. Cook for a few minutes to allow the cream cheese to melt and create a thick sauce. Stir through the paste. Serve pasta topped with pangrattato
