Clover Butro Roast Chicken Tapas
Nothing beats an easy to make and even easier to prepare roast chicken especially when entertaining your guests.

4-5 Chicken leg and thigh pieces
½ cup Clover Butro
2 cloves garlic, chopped
2 tbsp smoked paprika
1 tbsp oregano
1 tbsp ground cumin
Handful fresh parsley, chopped
Salt and pepper to taste
Fresh salad for serving
Lemon wedges for serving
Preheat the oven to 180C. Season the chicken with salt and pepper
In a bowl, combine the Clover Butro, garlic, smoked paprika, oregano, cumin and parsley. Season with salt and pepper. Lift the skin of the chicken from the flesh and tuck the Butro mixture under the skin of all the chicken pieces. Use leftover mixture for the outer skin of the skin and rub all over.
Place lemon slices onto a baking tray and top with the chicken.
Roast for 35-40 minutes or until the chicken is cooked through.
Serve with fresh salad and lemon wedges.
Chefs Tip: Squeezing lemon over your chicken makes for a tender end result.
