Clover Classic Banana Hemp Muffins

A fruity muffin mainly banana flavoured, is one for the books.

Serves: 4-5
Time: 20 minutes

Ingredients:

2 cups flour
1 tsp baking powder
Pinch of salt
4 tsp hemp hearts + extra for sprinkling on top
2 tsp flax powder
1 tsp ground cinnamon
2 small banana’s, mashed
½ cup brown sugar
2 tbsp honey
1/3 cup Clover Classic fat spread, melted
2 large eggs, beaten

Method:

Preheat the oven to 180C.

In a large bowl, combine the flour, baking powder, salt, hemp, flax powder and ground cinnamon. In a separate bowl, whisk together the eggs, banana, honey, Clover Classic fat spread and brown sugar.
Pour the wet ingredients into the dry and mix to combine. Ladle spoonful’s into a greased muffin tin and sprinkle the excess hemp on top. Bake for 18-20 minutes, or until a skewer comes out clean.

 

Chefs Tip: Use other immune boosting fruits like blueberries for an extra dose of anti-oxidants.
