Clover Classic Cheese, Avo & Beef Burrito

Beef up your next Tex-Mex night with our Cheese, avo and Beef Burritos. This Burrito recipe is a must try and is bound to make your family exclaim “Ole!”

½ onion, finely chopped
500g Lean beef mince
2 tbsp chipotle spice
2 tbsp tomato paste
3 birds eye chilli
2 avocados, smashed and seasoned
400g Grated Emmental and mature cheddar cheese blend, for filling and crust
6 large tortillas, warmed in the microwave
1 ½ cups Clover Classic dairy snack
1 clove garlic, grated
1 cup fresh coriander, chopped


In a pan, saute the onions until soft. Add the mince, chipotle, tomato paste and chilli and saute until the beef is cooked through. Add a few tablespoons water to the mince if it slightly dry or it begins to catch at the bottom while cooking. Season to taste and remove from the pan and set aside. To make the burritos, spread a few spoons of avocado in the centre of the tortilla, followed by a bit of cheese, and a few spoons of mince. Fold the tortilla over the ingredients, fold the sides and ends of the tortillas and roll forward. Repeat the process with the remaining tortillas and ingredients. Heat a pan and sprinkle over ½ cup cheese in a circle. Place the burrito on top of the cheese and cook for 3-5 minutes. When the cheese starts to crisp, use a spatula to gently wrap the burrito in the cheese and continue to cook until crisp all over. Combine the dairy snack, garlic and coriander to make a dip. Serve the burrito warm with the dip

Chefs Tip: It can be enjoyed on its own as a snack or you can use it in delicious recipes such as this and you can even play around with the flavor of this dressing – like adding a chopped chili for kick.
