1 onion chopped 2 cloves garlic, chopped 1 chilli, chopped Few curry leaves 1 tbsp garam masala 1 tbsp turmeric 1 tbsp cumin 1 tbsp coriander Salt and pepper to taste 1 cup Clover Classic dairy snack, plain flavor ½ cup cream 1 cup pumpkin cubes 2 hake fish fillets, cubed 200g prawns, deveined Fresh coriander to serve
Method:
Heat a generous glug of oil in a pot and sauté the onions along with the chilli and curry leaves. Sprinkle in the spices, garlic and ginger, season with salt and pepper and add in the pumpkin cubes. Add a dash of water and allow to simmer for a few minutes. Stir in the Clover Classic dairy snack and cream and add in the fish fillets. Cook for 2 minutes then add in the prawn and cook for another minute. Serve with cooked rice, a dollop of Clover Classic dairy snack and garnish with fresh coriander.
Chefs Tip: You can also use the curry base to include other veg or proteins like chicken.
