Simply Chicken Poke Bowl

Back to reality as the Easter weekend draws to a close, thank goodness for our moms! With their super powers they make the juggling act look so easy!

200g Simply Chicken Nuggets
2 Cups Jasmine Rice, cooked
½ Cup pineapple cubes
¼ Cup crispy onion sprinkle
1 avocado, diced
½ cucumber, diced
pickled ginger, to serve
sushi mayonnaise, to serve


Cook the Simply Chicken Nuggets according to package instructions.
To assemble the poke bowls, add a portion of rice to each bowl, add some Simply Chicken Nuggets and divide the other ingredients amongst the bowls. Garnish each bowl with some pickled ginger and sushi mayonnaise before serving.

Chefs Tips:

1. The simply chicken southern style bites and fingers make great options for this dish too.
2. If you don’t have sushi mayonnaise use a mild creamy based mayonnaise instead.
3. A poke bowl can be any ingredients you like or find in your fridge, get creative and change it up to your liking.
