Clover Classic Loaded Broccoli and Cauliflower Casserole
One of the easiest of ways to cook veg that is enjoyable is in a casserole.
Serves: 3-4

Ingredients:
4-5 streaky bacon pieces
½ large head of broccoli, cut into florets and blanched
½ large head Cauliflower, cut into florets and blanched
2 knobs butter
1 ½ tbsp flour
1 cup milk
½ cup sour cream
1 tsp garlic powder
1 tbsp dried mixed herbs
1 tsp cayenne pepper
Salt and pepper to taste
½ cup Clover Classic Mayo, 1
2 spring onions, chopped
½ cup cheddar cheese, grated
½ cup mozzarella cheese, grated
Handful fresh parsley for garnish
Method:
Preheat the oven to 180C
Cook the streaky bacon in a large pan until crispy and the fat has rendered out. Remove from pan and crumble up into bits.
Add the butter to the pan and sprinkle over the flour. Add in the garlic powder, dried mixed and cayenne pepper and stir. Cook for a minute, then gradually whisk in the milk and season with salt and pepper.
Remove from the heat and allow to cool slightly. Stir in the sour cream and the Clover Classic mayo.
Assemble the dish by adding the blanched broccoli and cauliflower to a greased casserole. Pour over the sauce then add in the crispy bacon bits and spring onion.
Top with cheese and some of the parsley then bake in the oven for 25-30 minutes, until the cheese golden. Garnish with more parsley to serve.
Chefs Tip: Swap out the bacon if you want to go meat-free, or use an alternative like ham or chicken.
