Clover Classic Orange Souffra Tart
That sweet tooth craving for a bite of flaky pastry with a sweet, silky soft custard tart filling, its closer than you think! Orange Souffra tart is a Greek classic perfect for that midweek sweet treat.

300g sheets phyllo pastry
150g butter, melted
2 cups Clover Classic Custard
Juice and Zest of 1 orange
½ cup fresh cream
1 egg, beaten
Icing sugar for dusting
Preheat the oven to 180C
Bush 2 layers of phyllo pastry with melted butter and place onto the bottom of a baking dish, to form the base
Lay another sheet of pastry on a work surface and brush with butter. Fold the pastry a few times and coil into a spiral on top of the other pastry base.
Repeat with the remaining phyllo pastry.
Drizzle with the remaining butter and bake for 20 minutes or until golden brown.
Make the custard mixture by transferring the Clover Classic custard to heat gently in a saucepan and whisk in the egg and cream. Remove from the heat and whisk in the orange juice and zest. Pour over the pastry and bake in the oven for another 20 minutes.
Allow to cool before sprinkling over the icing sugar
Chefs Tip: You can premake the filling and store until you are ready to bake the pastry to serve.
