Clover Classic Rice Pilaf
Rice is one of those staple dishes that often gets treated like the side dish it often is. Consider a Classic Rice Pilaf as an upgrade – its like rice that puts on a nice dress and some earrings by just adding a few simple ingredients and the payoff is plainly amazing!
Serves: 3-4

Ingredients:
2 cups long grain rice, soaked in water
1 onion, chopped
1 cinnamon stick
1 tsp cumin seeds
1 tsp turmeric
2 cardamom pods
1 tsp chilli powder (optional)
3 cups vegetable stock
Salt and pepper to taste
1 cup sultana for garnish
Fresh coriander for garnish
Toasted almond flakes/chopped cashew nuts for garnish (optional)
For the spiced dairy snack dressing
1 cup Clover Classic dairy snack, plain flavor
1 tsp ground cumin
Handful fresh coriander, chopped
Squeeze of fresh lemon
Salt and pepper to taste
Method:
Heat a glug of oil in a large pot. Saute the onion with the cinnamon stick, cumin seeds,turmeric and cardamom pods for a minute. Stir in the rice and chilli powder and coat the rice grains well. Season with salt and pepper. Add in the vegetable stock until the rice is covered and cook on low heat until the rice is tender, stirring in between.
Once the rice is cooked, stir together the ingredients for the dressing. Garnish the rice with sultana’s, coriander almond and almond flakes if using. Drizzle over the dressing and serve.
Chefs Tip:This pilaf can be enjoyed as meal on its own – you could also add some protein of choice to level up this budget friendly dish
