Clover Classic Spicy, Sticky Cauli

You’re hosting date night but you need inspo on how to spice up your veg based dishes for your vegetarian bae, then stay right where you are because this one is for you!

Serves: 2-4

Ingredients:

1 small cauliflower head cut into florets
1/2 cup corn flower or rice flower
1 cup cake flour
1/2 tsp turmeric
Salt and pepper to taste
1/2- 1 1/2 cups of water

1/2 onion chopped
1/2 green pepper chopped
4 cloves of garlic chopped
1 thumb size piece of ginger chopped
5 green chillies
3 tbsp oil

For the sauce
1/2 cup soy sauce
1/4 cup orange juice
2 tbsp rice vinegar
1/2 tsp red chilli flakes
1 tbsp sesame oil
1 tsp Szechuan peppercorns
1tsp cornflour

Oil for frying

1/2 cup Clover Classic dairy snack
A handful of coriander leaves finely chopped

For serving
Spring onion
Red chilli
Cooked jasmine rice

Method:

In a large bowl combine the flours, seasonings and water to form a smooth batter. Add in the cauliflower florets and toss to fully coat them in the batter. Fry off the florets in hot until golden and crispy about 2-3 minutes and drain on paper towel. For the coriander sauce, in a medium bowl, mix together the Clover Classic dairy snack, coriander , salt and pepper
In a large pan over medium heat add in the oil,green pepper, onion and allow to saute for 4 minutes. Add in the crushed green chilli, garlic and ginger and fry until fragrant. Whisk the ingredients for the sauce in a small bowl and add it to the pan, stir until the sauce thickens. Add in the fried cauliflower florets and stir to evenly coat it in the sauce. Serve hot over jasmine rice, drizzle with the coriander sauce, garnish with fresh spring onion and sliced red chilli.
