Clover Taco Casserole with Classic Mayo Dip
If the weather is a bit too gloomy to enjoy your favourite taco, simply transform it into a hearty, classic casserole that will please everyone around the dinner table – like with our Classic Mayo Taco casserole.

Ingredients:
500g beef mince
1 onion, chopped
2 cloves garlic, chopped
2 tbsp taco seasoning
1 cup corn kernels
1 cup red kidney beans
1 tin chopped tomatoes
1 tsp sugar
2 tbsp Clover Classic Mayo, 1
Salt and pepper to taste
2 cups grated cheese
5-6 mini tortilla wraps
For the dressing
1 cup Clover Classic mayo, 1
2 tbsp sour cream
1 tbsp hot sauce
Juice of 1 lime
1 tsp taco seasoning
Handful chopped parsley
Shredded lettuce for serving
Tomato and onion salsa for serving
Method:
Preheat the oven to 180C.
Heat a glug of oil in a large pan and add in the onion. Saute for a few minutes. Add in the mince and break up in the pan. Stir in the garlic and taco seasoning and cook for a minute. Stir in the corn kernels, red kidney beans, chopped tomatoes, teaspoon of sugar to balance the acidity and the Classic Mayo. Season with salt and pepper and allow to simmer for a few minutes and set aside.
Layer tortillas in the bottom of a baking dish. Top with a layer of the mince mixture, add another layer of tortillas and top with another layer of the mince. Top with cheese and bake in the oven for 15-20 minutes.
Mix together the ingredients for the dressing.
Serve the casserole with chopped lettuce, tomato onion salsa and a generous drizzle of the mayo dressing.
Chefs Tip:For this recipe, we are using Classic Mayo number 1 – Mild Tanginess, to give this dish a delicious mild and creamy taste.
