500ml hummus 1 cup mixed olives Roast red pepper, chopped Cherry tomatoes, roasted and halved ½ small cucumber, chopped or sliced 1 tin chickpeas, drained 1 tsp smoked paprika salt and pepper to taste 1 tbsp sumac Fresh herb leaves for garnish
For the whipped feta 2 discs Clove Elite feta, crumbled ½ cup cream cheese 1 tbsp olive oil Zest of 1 lemon
Method:
Heat a glug of oil in a saucepan and season with salt, pepper and smoked paprika. Add to the pan and cook for a few minutes until golden in color. Set aside. Make the whipped feta by adding the ingredients to blender or use a stick blender to blend until smooth.
Spread the hummus onto a serving plate or platter, top with tomatoes, cucumber, olive and chickpeas. Drizzle over the whipped feta and garnish with Sumac fresh herb leaves and extra crumbled feta.
Chefs Tip: Add as may toppings as you like, but don’t omit the cheese!
