700g ready prepared beef short rib, pulled Clover Elite Cheddar, cut into thick cubes 1 cup seasoned flour 2 eggs, beaten 2 cups panko breadcrumbs, seasoned Oil for frying

Method:
Place the pulled beef short rib into dish and pack down compactly. Place into the fridge. Take scoops of the pulled beef and shape into a patty. Place a block of Clover Elite cheese in the middle and roll. Dip into the seasoned flour, then egg then breadcrumbs. Heat the oil for frying and fry until crispy and browned. Serve with sauce of choice.
Chefs Tip: Depending on the size of the pulled beef croquettes, you can make them bite size for a delicious canapé.
