1 croissant/Ciabatta bread loaf 1 cup Clover Elite Cheddar Cheese, grated 1 cup Clover Elite Tussers cheese, grated 1 tbsp Italian dried herbs 1 red onion, thinly sliced 1 tomato, sliced 2 gherkins, sliced ½ cup pickled jalapenos ½ cup mayo 1 tsp mustard 1 tsp tomato sauce 1 tbsp chili flakes
Method:
Slice the bread loaf. Mix together the mayo, mustard, tomato sauce and chilli flakes. Spread on the bottom of each slices. Top one slice with the cheese, onion, tomato, pickles and mixed herbs and close. Press down slightly and grill the bread over medium warm coals. Alternatively, fry them off with a knob of butter in a pan. Serve with sauce of choice.
Chefs Tip: Make sure your coals are not too hot, otherwise your bread will burn or char too much before the filling is warm and melted.
