Clover Elite Tikka Chicken Mac & Cheese
The cooler weather rings in thoughts of comfort food and Mac and cheese is undeniably the most comforting of them all, especially for a weekend. There are so many way to make it and thanks to the Elite taste, Elite Quality and Exlite texture of Clover Elite cheese, we’re spicing things up with our Clover Elite Chicken Tikka Mac and cheese.

For the chicken tikka
3 chicken breasts, cubed
1 tbsp garam masala
1 tsp red chilli powder
1 tbsp tikka powder
1 tbsp garlic and ginger paste
3 tbsp plain yoghurt
For the mac and cheese
300g cooked macaroni
2 tbsp butter
2 tbsp flour
1 cup milk
½ cup cream
1 cup Clover Elite Tussers cheese, grated
1 Cup Clover Elite Gouda cheese, grated
salt and pepper to taste
1 tsp garlic powder
1 tsp paprika
Place all the chicken ingredients into a bowl and allow to marinade for at least 20 minutes. Overnight is best.
Heat oil in a large pan and cook the chicken until browned with a slight char.
Melt the butter in a saucepan and add in the flour, whisking until well combined. Cook for a minute.
Slowly add the milk whilst whisking and pour in the cream. Season with garlic powder, paprika, salt and pepper and stir in the cheese. Cook until slightly thickened.
Add the macaroni to a baking dish along with the chicken. Pour over the sauce and scatter over some reserved cheese.
Bake for 10 minutes and serve.
Chefs Tip: You can use any of your favourite Clover Elite cheese flavours in this recipe. We’ve used the sweetness of Clover Elite Gouda and the melting effects of Clover Elite Tussers for the ultimate mac and cheese
