Clover Fresh Milk Cheese & Herb Gratin

A potato Gratin with a herby cheesy sauce is the impressive side dish she thinks and will wow anyone, even as a main meal.

Ingredients:

3 medium orange/normal sweet potatoes
4 large potatoes
4 parsnips (optional)
1 red onion, sliced thinly
Salt and pepper to taste
3 cloves garlic, sliced
Handful fresh thyme, leaves seperated
Handful fresh sage leaves, chopped
Few sprigs fresh rosemary, chopped
Handful fresh parsley, chopped
1 cup grated white cheddar cheese
2 cups grated cheddar cheese
1 cup Clover Fresh milk
½ cup vegetable stock
Salt and pepper to taste

Method:

Preheat the oven to 190C.
Peel the veg and slice into very thin slices. You could also use a mandolin for this.
Place into a bowl and toss with salt, pepper, herbs and garlic. Arrange the vegetables in a greased skillet or baking dish.

Place the Clover fresh milk and broth into a saucepan to gently heat up. Add some of the cheese and whisk to melt the cheese. Pour the milk mixture over the vegetables and top with the rest of the cheese.
Cover with foil and bake for 30-40 minutes until cooked through. Remove foil and bake for another 15 minutes.
Serve warm.
