Clover Good Hope Lentil Bobotie
A delicious vegetarian alternative.

Ingredients:
1 onion, chopped
1 carrot, peeled and finely chopped
2 cloves garlic, chopped
2 tbsp curry powder
1 tsp ground cumin
1 tsp turmeric
400g brown lentils, cooked
1 tsp vinegar
1 tbsp chutney
50g sultanas
½ cup veg stock
Salt and pepper to taste
For the topping
2 eggs, beaten
1 cup Clover Good Hope Soy milk
Salt and pepper to taste
½ tsp turmeric
Bay Leaves for garnish
Flaked almonds for garnish
Yellow rice for serving
Method:
Heat a glug of oil in a large saucepan.
Add in the chopped onion and carrot and sauté for a few minutes. Stir in the curry powder, turmeric and garlic and cook for a minute. Stir in the lentils vinegar, chutney and sultanas and cook for a few minutes. Stir in the veg stock, season with salt and pepper and allow to simmer for a 2 minutes.
Mix together the ingredients for the topping.
Scoop the lentil mixture into an oven safe dish and pour over the topping. Garnish with bay leaves and almond flakes. Bake for 10-15 minutes in a preheated oven at 180C, until the topping has set.
Serve warm with yellow rice.
