2-3 orange sweet potatoes, cooked 1 cup sweet corn kernels, drained ½ cup flour Handful fresh coriander, chopped 1 tsp chilli flakes 2 spring onions, chopped ½ cup cheese, grated Salt and pepper to taste Oil for frying

Method:
Add the cooked sweet potatoes to a bowl and mash up. Add in the corn kernels, flour, coriander, chilli flakes, spring onions and grated cheese. Season with salt and pepper and mix until well combined. Test some of the batter to see if it holds shape. If it doesn’t hold, add more flour. Use tablespoons to scoop mixture into heated oil fry until golden brown in colour. Alternatively add more flour to the mixture and shape. Place into the airfyrer at 180C to cook until golden brown. Serve with sauce of choice.
Chefs Tip: You can use as many veg as you prefer to make these fritters. Frozen veg works well too.
