Clover Krush Fattoush Smash

Colourful, bright and refreshingly delicious with 100% goodness!

Ingredients:

2 large pita bread
1/2 cup oil, heated
For the Salad filling
1 Romain/Cos lettuce, chopped
1-2 small cucumbers, chopped
100g cherry tomatoes, halved
1-2 radishes, thinly sliced
1 red bell pepper, chopped
½ red onion, thinly sliced
Handful mint leaves, chopped
1 tbsp dukkha
Juice of 1 lemon


Dressing
1/3 cup extra virgin olive oil
2 tbsp tahini
1/3 cup plain yoghurt
1 tsp honey
1 tbsp sumac
Squeeze of lemon
Salt and pepper to taste
Water for thinning out

Method:

Heat the oil in a saucepan.

Add 2 tbsp of oil to a frying pan and add in the pita bread. Use a ladle to scoop up the hot oil and pour over the pita. Keep pouring as it starts to puff up and brown. Set aside

Combine the salad ingredients and sprinklle over the dukkah. In a small bowl, mix together the ingredients for the dressing. Add a dash of water to the dressing if too thick. Pour the dressing over the salad. Break open one side of the puffed up pita bread and scoop in the salad. Turnover on a plate and break open the side when ready to serve.

Pour more dressing over the salad.

Chefs Tip: Fattoush is a Lebanese/Metiditteranean salad with fried bread pieces and typically includes lettuce, tomatoes, cucumbers and radishes
If you can’t find pita breads big enough, try large tortillas. You could also make mini versions of this Fattoush salad using mini pita breads.
