Clover Krush Roast butternut and apple salad

It’s a great way to get your daily dose of vitamins and to inspire your health journey, here’s a quick and easy Roast butternut and apple salad for that extra dose of 100% goodness.

Serves: 2-4
Time: 20 minutes

Ingredients:

½ butternut, sliced into crescents
1 tsp ground cinnamon
½ tsp nutmeg
1 tbsp garlic powder
1 tbsp maple syrup
salt and pepper to taste
1 -2 pink lady apples, sliced thick
2 cups fresh rocket
½ red onion, chopped
½ red pepper, chopped
Handful fresh parsley, chopped


For the dressing
¼ cup Krush orange or apple juice
1 tbso white wine vinegar
1 tbsp honey
2 tsp Dijon mustard
salt and pepper to taste

Chopped nuts for garnish

Method:

Place the butternut into a bowl and season with cinnamon, nutmeg, garlic powder, salt and pepper. Drizzle with olive oil and place into a roasting dish. Roast for 15-20 minutes, or until cooled through and drizzle with maple syrup.

Place rocket onto a serving dish and top with butternut, apples, red onion and red pepper. Mix together the ingredients for the dressing in a jar and drizzle over the salad. Garnish with nuts and parsley.
