Clover Krush Spring Roll Salad

Ingredients:

1 cup rice/bean noodles, cooked
1 cup red cabbage, shredded
2 carrots, julienned
1 red pepper, julienned
1 small cucumber, julienned
Handful fresh coriander, chopped
Handful fresh mint leaves
Butter lettuce, roughly chopped (or use whole baby butter lettuce)

For the dressing
¼ cup Krush carrot and orange
2 tsp soy sauce
1 tsp sesame oil
1 tsp chilli flakes
2 tbsp nut butter

1 tsp sesame seeds for garnish
½ cup toasted nuts, chopped, for garnish

Method:

Mix together the ingredients for the dressing. Assemble the salad buy placing the noodles into a bowl along with the veg and herbs. Toss together and place into serving jar or platter.

Drizzle over the dressing, garnish with sesame seeds and more fresh herbs and nuts to serve
