Clover Samp & Beans with Mushroom Sauce

Today we pay tribute to one of the greatest to have ever lived. One of the best ways to say thank you and to show love is through food. Now I’m not sure how many of you know this, but some of the late, great Madiba’s favorite meals included Umngqusho, which is samp and beans. It can be a meal on its own or served as a side dish and Sims is here to show us how to make this delicious dish.

Serves: 4-5
Time: 25 minutes

Ingredients:

2 cups dry samp and beans, soaked
1 onion, chopped
1 clove garlic, chopped
500ml stock (chicken or veg)

For the sauce
1 tbsp butter
1 onion, chopped
150g mushrooms, chopped
salt and pepper to taste
¼ cup cream of mushroom soup powder
1-2 cups Clover Fresh milk
Handful fresh herbs for garnish

Method:

To prepare the samp and beans, heat a glug of oil in a large saucepan. Add in the onion and sauté until golden in colour. Add in the garlic and stir in the soaked samp and beans. Coat well with the sautéed onion and pour in the stock until the samp is covered. Cook until the samp and beans are tender. Keep checking during the cooking process to ensure there is sufficient liquid and that it does not burn on the bottom.

This dish goes perfectly with another one of Madiba’s favourites – Sweet Chicken

– The Fresh milk mushroom sauce is a tasty addition to this traditional dish – delicious enough to enjoy on its own.
