100g flour pinch of salt 1 tsp tsp baking powder 2 tbsp sugar 3 eggs 200ml Clover Sip Up, any flavour 10 ml oil
For the filling 200g cream cheese 100g icing sugar 1 tsp vanilla essence
Method:
Place the flour, salt, baking powder and sugar into a bowl. In a jug, whisk together the eggs, Sip up and oil. Gradually pour the egg mixture into the flour mixture whilst whisking, ensuring there are no lumps. Add more Sip Up in the mixture is too thick. Pour the batter into a sheet pan and bake at 180C. Once baked, allow to cool slightly. Mix together the ingredients for the filling, spread over the pancake and roll up from the long side up, into a log. Slice and serve.
Chefs Tip: Roll the roulade up as it starts to cool, then unfold to spread the filling.
