Creamy avocado and rotisserie chicken salad A load-shedding friendly recipe Recipes by Kelly Damon Ingredients½ rotisserie Woolies chicken (shredded) 300g mixed salad leaves½ cup walnuts toasted roughly chopped1 cup exotic tomatoes halved½ cucumber chopped1 Hass avocado chopped½ red onion, sliced For the dressing: 1 Hass avocados ¼ cup plain yoghurtJuice and Zest of 1 lime ½ cup coriander finely chopped2 green chillies finely choppedSalt and pepper to taste MethodIn a large serving bowl, add the onion, chicken, cucumber, walnuts, salad leaves tomatoes. In a separate bowl mash the avocado, add in the rest of the ingredients and mix until smooth. Drizzle the dressing over the salad and serve.
