Creamy avocado and rotisserie chicken salad

A load-shedding friendly recipe

  • ½  rotisserie Woolies chicken  (shredded) 
  • 300g mixed salad leaves
  • ½ cup walnuts toasted roughly chopped
  • 1 cup exotic tomatoes halved
  • ½ cucumber chopped
  • 1 Hass avocado chopped
  • ½ red onion, sliced 

For the dressing: 

  • 1 Hass avocados 
  • ¼  cup plain yoghurt
  • Juice and Zest of 1 lime 
  • ½ cup coriander finely chopped
  • 2  green chillies finely chopped
  • Salt and pepper to taste


  1. In a large serving bowl, add the onion, chicken, cucumber, walnuts, salad leaves  tomatoes. In a separate bowl mash the avocado, add in the rest of the ingredients and mix until smooth. Drizzle the dressing over the salad and serve.
