Chicken and Corn Soup
The perfect winter warmer!

Ingredients:
- 1 Onion, finely chopped
- 2 Celery stalks, finely chopped
- 4 Cloves of garlic, finely chopped
- 400g Chicken breast, cubed (or leftover braai chicken, shredded)
- 1 Tin of cream-style corn
- 4 Cups chicken stock
- 50g Cream of chicken soup powder
- ½ Cup Ellis Brown
- Salt & pepper to season
- Toasted sourdough, to serve (optional)
How To Make Chicken and Corn Soup
- Heat a splash of oil in a pot over medium heat and sauté the onion and celery until soft and fragrant.
- Add the garlic and chicken to the pot, season with salt and pepper, and cook until the chicken is lightly browned.
- If you’re using leftover braai chicken, just warm it through.
- Stir in the cream-style corn and let it simmer gently.
- In a separate jug, mix together the chicken stock, soup powder, and Ellis Brown until well combined, then pour this mixture into the pot.
- Stir everything together and allow the soup to simmer until thickened to your liking.
- Serve warm with toasted sourdough on the side for a hearty winter meal.
