Creamy Tomato, Spinach & Ricotta Ravioli

Serves: 2
Preparation time: 15 – 20 minutes
Cooking time: 15 minutes
Ingredients:
- 250g store-bought spinach & ricotta ravioli or any flavour of your choice
- 1 Tbsp oil
- 1 Tbsp butter
- 2 garlic cloves, minced
- ½ red pepper, sliced
- 2 sprigs fresh thyme
- 1 Tbsp tomato paste
- 1 cup cherry tomatoes, sliced
- 2 cups baby spinach
- 1 ½ cups cream
- 1 cup cheddar cheese
- ½ cup parmesan cheese
To serve:
parmesan cheese, grated
fresh parsley, chopped
How To Make Creamy Ravioli
- Start by preparing the ravioli according to packet instructions.
- Heat a large pan, add in olive oil, butter and garlic, allow the garlic to cook until fragrant then add in red peppers and thyme cook for about 4 minutes.
- Add in tomato paste and cherry tomatoes, spinach cook for 3 minutes, then add in cream, spices and season, lastly stir in cheddar cheese, half the parmesan cheese and cooked ravioli.
- Garnish with grated parmesan cheese and freshly chopped parsley.
