Creamy Tomato, Spinach & Ricotta Ravioli

Ingredients:

 

 
  • 250g store-bought spinach & ricotta ravioli or any flavour of your choice
  • 1 Tbsp oil
  • 1 Tbsp butter
  • 2 garlic cloves, minced
  • ½ red pepper, sliced
  • 2 sprigs fresh thyme
  • 1 Tbsp tomato paste
  • 1 cup cherry tomatoes, sliced
  • 2 cups baby spinach
  • 1 ½ cups cream
  • 1 cup cheddar cheese
  • ½ cup parmesan cheese

To serve:
parmesan cheese, grated
fresh parsley, chopped

How To Make Creamy Ravioli

  1. Start by preparing the ravioli according to packet instructions. 
  2. Heat a large pan, add in olive oil, butter and garlic, allow the garlic to cook until fragrant then add in red peppers and thyme cook for about 4 minutes. 
  3. Add in tomato paste and cherry tomatoes, spinach cook for 3 minutes, then add in cream, spices and season, lastly stir in cheddar cheese, half the parmesan cheese and cooked ravioli. 
  4. Garnish with grated parmesan cheese and freshly chopped parsley.
