Spicy Kofta Stuffed Flatbread

A deliciously easy flatbread made in the Everdure Kiln Pizza Oven!

Prep Time: 15 minutes
Servings: 2-4

Ingredients:

  • 500g ground lamb
  • 1 small white onion, grated
  • 4 garlic cloves, crushed
  • 1 Tbsp harissa paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • handful of flat-leaf parsley, finely chopped (plus extra to serve)
  • 50g feta
  • Olive oil
  • 6-8 Pita or flatbreads
  • To serve
  • Tahini yoghurt dressing

How To Make Spicy Kofta Stuffed Flatbread

  1. Add the ground lamb, grated onion, crushed garlic, ground cumin, coriander, cinnamon, chopped parsley, crumbled feta and salt to a mixing bowl.
  2. Mix very well to combine and to ensure the seasoning is well-distributed.
  3. Carefully slice the flatbreads open so they become pockets.
  4. Stuff the filling into the flatbread pockets, so they’re about half an inch thick.
  5. Try to press the filling evenly into the bread. et a large pan over medium-high heat and add a little drizzle of oil.
  6. Add the stuffed flatbreads and cook for roughly 4 minutes on each side, then stand them upright to crisp up the open section.
  7. Remove from the pan and repeat with the remaining stuffed flatbreads. If you’ve cooked the flatbreads in halves, you can choose to slice them into quarters to serve.
  8. Arrange them on a platter, then scatter over flat leaf parsley and serve with the tahini dipping sauce on the side.
