Crispy Beef Cones

The cones are baked to crisp perfection while the spiced beef stays juicy, creating a satisfying contrast in every bite.

Ingredients:

For the beef mixture:

  • 500g ground beef
  • 1 small yellow onion, finely chopped
  • 1 tbsp fresh garlic, minced
  • 4 tbsp tomato paste
  • Salt to taste
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika powder
  • 1/2 tsp red chili powder
  • 1 tsp red chili flakes
  • 1 cup water
  • 1 cup mixed bell peppers, diced
  • 1-2 Serrano peppers
  • 2 tbsp oil

To assemble:

  • 8 medium tortillas, halved
  • 8oz Tillamook Farm style Mozzarella Shredded Cheese
  • 1 tsp dried parsley for garnish
  • Cooking spray
  • Toothpicks

How To Make Crispy Beef Cones

  1. In a pan, heat oil on medium heat.
  2. Once the oil is hot, add chopped onions and garlic.
  3. Sauté for 1 to 2 minutes until the onions become translucent. Then, add and sauté the beef for 2 to 3 minutes until it changes color. Add salt, pepper powder, red chili powder, garlic powder, and red chili flakes.
  4. Mix well and cook for 1 to 2 minutes until the spices are well combined.
  5. Add the tomato paste and stir until it’s fully incorporated. Then, add the water.
  6. Cover the pan and stir occasionally until the mixture thickens. This should take about 10 to 12 minutes.
  7. Once the water has mostly evaporated and the beef is cooked, add the bell peppers and Serrano peppers cook for 3 to 4 minutes. Remove the pan from heat and set it aside.
  8. Preheat the oven to 200°C and line a baking sheet with parchment paper.
  9. Shape each tortilla half into a cone and secure the seam with a toothpick. Lightly spray the outside of each cone with cooking spray.
  10. Place cones seam-side down on the baking sheet.
  11. Bake empty cones for 8-10 min until golden and crisp. Fill each cone with the beef filling and cheese. Stand each filled cone upright in a loaf pan, bake the cones for 8 to 10 minutes or until the cheese is melted and bubbly. Garnish with parsley and serve warm.
