Crispy Coated Chicken Schnitzels

Chicken schnitzel is a firm family favourite but there’s also a way to make it even easier and more delicious!

 

Ingredients:

  • 4 chicken breast fillets, butterflied and pounded thin
  • ½ cup Nola Original Mayonnaise
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1½ cups breadcrumbs (panko or golden)
  • ½ cup grated Parmesan (optional, for extra crunch)
  • 2 tbsp oil (for shallow frying)

How To Make Crispy Coated Chicken Schnitzels

  1. In a bowl, mix Nola, Dijon mustard, garlic powder, paprika, lemon juice, salt, and pepper.
  2. Add the chicken fillets to the mixture, coating each piece thoroughly.
  3. Cover and refrigerate for at least 30 minutes to allow the Nola to tenderise the meat.
  4. In a separate bowl, mix breadcrumbs and Parmesan.
  5. Remove chicken from the fridge and press each fillet into the breadcrumb mixture until fully coated.
  6. Heat oil in a large pan over medium heat.
  7. Shallow-fry schnitzels for 3–4 minutes per side until golden and cooked through.
  8. Drain on paper towels and serve warm with lemon wedges and a crisp salad.
