Crispy Coated Chicken Schnitzels
Chicken schnitzel is a firm family favourite but there’s also a way to make it even easier and more delicious!
Ingredients:
- 4 chicken breast fillets, butterflied and pounded thin
- ½ cup Nola Original Mayonnaise
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- 1½ cups breadcrumbs (panko or golden)
- ½ cup grated Parmesan (optional, for extra crunch)
- 2 tbsp oil (for shallow frying)
How To Make Crispy Coated Chicken Schnitzels
- In a bowl, mix Nola, Dijon mustard, garlic powder, paprika, lemon juice, salt, and pepper.
- Add the chicken fillets to the mixture, coating each piece thoroughly.
- Cover and refrigerate for at least 30 minutes to allow the Nola to tenderise the meat.
- In a separate bowl, mix breadcrumbs and Parmesan.
- Remove chicken from the fridge and press each fillet into the breadcrumb mixture until fully coated.
- Heat oil in a large pan over medium heat.
- Shallow-fry schnitzels for 3–4 minutes per side until golden and cooked through.
- Drain on paper towels and serve warm with lemon wedges and a crisp salad.
