Crispy Egg Yolk on Toast

Gooey crispy fried egg yolk on a bed of smashed avo topped with capers and hot sauce! YUM!

Serves: 4

Ingredients:

8 extra large eggs
4 slices bread of your choice, toasted
1 avocado, peeled and cut into quarters
1 Cup panko or bread crumbs
2 Tbsp capers, roughly chopped
1 clove garlic
salt and pepper, to taste
sriracha hot sauce, to serve

Method:

Prepare the egg yolks first by carefully separating the yolks from the whites.
Brush a plate with some oil and place the egg yolks onto the plate and then into the freezer for 30 minutes.
Heat up some oil for deep frying to a medium-high temperature.
Prepare the toast by rubbing each slice with the raw garlic and smash a ¼ piece of avo onto each slice using a fork, season with salt and pepper.
Add 2 tablespoons of water to the egg whites and whisk.
Dip the slightly frozen yolks into the egg white and then into the bread crumbs. Repeat the process with all the egg yolks and repeat to coat them a second time.
Place the egg yolks into the oil to fry to a golden brown colour.
Once the yolks are ready, place two onto each slice of toast, sprinkle over some chopped capers and a drizzle of sriracha hot sauce before serving.

Chefs Tip: By placing the egg yolks in the freezer it makes them easier to handle and it also ensure a runny yolk when frying them.
