Crispy Lemon & Herb Potatoes with Grilled Hake

Lunch is served and it’s diabetic-friendly!

Ingredients:

 

  • 3 – 4 large, sweet potatoes, cubed 
  • 3 Tbsp olive oil
  • 2 Tbsp lemon juice & zest
  • 1 tsp mixed herbs
  • ½ tsp onion powder
  • ½ tsp salt & pepper 
  • To serve:
  • Grilled hake 
  • Fresh parsley chopped

How To Make Grilled Hake

  1. Preheat oven to 200°C. Place sweet potatoes into a large bowl along with the rest of the ingredients and toss well. 
  2. Then spread the potatoes onto a lined baking tray and roast in the oven for 25 – 30 minutes. 
  3. Serve with grilled hake and garnish with chopped parsley.
