Crispy Rice Omelette
This crispy rice omelette turns an everyday dish and leftovers into something thoughtful, with a golden base, soft centre, and just the right amount of crunch to impress.

Ingredients:
• 1¼ cups cooked rice (cooled or day-old)
• 3 Large or Extra-Large Nulaid eggs
• 2 tbsp oil
• 1 tbsp butter (optional)
• ½ tsp garlic powder
• 2 spring onions, sliced
• 1–2 tsp chilli paste
• 1 tbsp sesame seeds (toasted)
• Chopped Fresh herbs (chives or coriander)
• Salt and black pepper
How To Make Crispy Rice Omelette
1. Heat oil in a non-stick pan over medium-high heat.
2. Add cooked rice and sprinkle over garlic powder and a pinch of salt.
3. In a bowl, whisk eggs with soy sauce (if using), spring onions, salt, and pepper.
4. Lower the heat slightly. Pour the egg mixture evenly over the rice.
5. Tilt the pan gently so the egg spreads across the surface.
6. Cover with a lid and cook for 3–4 minutes until the egg is just set on top but still soft.
7. Slide onto a plate (or flip briefly if preferred). Drizzle over chilli paste, then sprinkle with sesame seeds and fresh herbs.
Chef’s Tip: Pressing the rice firmly and not moving it while cooking is key to achieving that golden, crispy base.
