Crunchy Cauliflower-and-Chicken Slaw with Cherries and Mint

Ingredients:

  • cauliflower 1 small head (about 400 g), shredded or finely chopped
  • radishes 4, thinly sliced
  • fresh cherries, pitted 1/3 cup
  • Woolworths julienne carrots 100 g
  • fresh parsley 1/4 cup, chopped
  • fresh mint 1/4 cup, chopped
  • spring onions 2, finely sliced
  • pumpkin seeds 2 T, toasted
  • Woolworths rotisserie chicken 1 cup shredded
  • micro herbs, to garnish

For the dressing whisk:

  • Woolworths double-cream plain yogurt 1/3 cup
  • lemon juice 2 T
  • Dijon mustard 1 t
  • honey 1 t
  • garlic powder 1/2 t
  • sea salt and freshly ground black pepper, to taste

How To Make Crunchy Cauliflower-and-Chicken Slaw with Cherries and Mint

  1. In a large mixing bowl, combine the cauliflower, radishes, cherries, carrots, parsley, mint, spring onions, and pumpkin seeds.
  2. Fold in the chicken, mixing well to distribute evenly.
  3. Pour the dressing over the slaw and toss until well-coated. Adjust the seasoning to taste and garnish with micro herbs. Enjoy immediately, or store in the fridge for up to 2 days.

Chefs Tip:For extra flavour, add crumbled feta or use this slaw as a filling for wraps. The microherbs add a fresh, peppery finish to each bite.
