Culinary Hotline - Chocolate Cake

Ingredients:

For the sponge:

  • 375ml cake flour
  • 5ml baking powder
  • 5ml bicarbonate of soda
  • 125ml cocoa powder
  • 500ml muscovado sugar
  • 250ml oil
  • 250ml buttermilk
  • 2 eggs
  • 5ml vanilla essence
  • 125ml coffee (3tsp instant coffee with boiling water)
  • 5ml white vinegar

For the ganache:

  • 230g milk chocolate, chopped
  • 250ml cream

To serve:

  • 360g caramel treat, whipped until smooth
  • 10ml hot chocolate powder, for dusting

How To Make Chocolate Cake, topped with Caramel & Whipped Chocolate Ganache

  1. Preheat oven to 180°C, grease, and line a cake tin with baking paper.
  2. Mix all the dry ingredients in a large bowl, in a separate bowl whisk together the sugar, oil, buttermilk, eggs and vanilla essence.
  3. Once combined add in the coffee and vinegar, and mix until just combined, do not overmix.
  4. Pour the batter into the prepared cake tin and bake for 30 – 40 minutes, or until a skewer inserted comes out clean.
  5. Place chocolate into a medium size bowl, then heat the cream and pour over the chocolate, stir to combine and allow to set completely and then transfer to a stand mixer and whisk on high speed until light and fluffy.
  6. To assemble, cut the cooled cake into half and spread with caramel then some whipped ganache, place the remaining layer on top, repeat and smoothen the rest of the ganache around the edges, dust with hot chocolate powder and enjoy!

  • 150g chocolate, chopped
  • 400g brown sugar
  • 3 eggs
  • 5 ml vanilla essence
  • 1 cup cocoa powder
  • 1 cup flour
  • 5ml salt

  • chocolate, chopped

How To Make Chocolate Brownies

  1. Preheat oven to 180°C.Grease a square baking tin and line with baking paper.
  2. In a saucepan melt together butter and half of the chocolate, once melted mix in the sugar until dissolved, then add in the eggs and vanilla essence.
  3. In a separate bowl mix flour, cocoa powder, salt & the other half of the chocolate, then combine the wet ingredients into the dry ingredients.
  4. Pour the batter into the prepared baking tin and bake for 25 – 30 minutes.
  5. Remove from the oven and allow it to cool completely before serving. Enjoy!
