A bread to go with every dish!

 

Ingredients:

  • 1 long French loaf or 2 smaller loaves (Day old bread is best)
  • 200g soft butter
  • 5 garlic cloves
  • 1 handful parsley
  • 100ml grated mozzarella cheese
  • 150ml cheddar cheese, grated

How To Make Easy Cheesy Garlic Bread

  1. Preheat oven to 180.
  2. Slice each French loaf into 1 or 1.5cm wide slices, making sure not to cut to the base of the loaf.
  3. The loaf should still hold together.
  4. Cut on the diagonal for larger slices.
  5. Place all the ingredients (except the bread) into a food processor and blend to a paste.
  6. Season with salt & pepper.
  7. Spread the butter mixture onto both sides of each slice add any remaining butter on top of the half.
  8. Wrap each load in foil.
  9. Bake for 20 – 25 minutes until the butter is melted and the crust is golden and crispy.
  10. Serve arm straight out the oven.

Ingredients:

  • 512g white bread flour
  • 10g salt
  • 8g instant yeast
  • 500ml water
  • Olive oil
  • Flaky salt
  • 2 onions, caramelised
  • 2 sprigs fresh rosemary

How To Make Caramelised onion & rosemary focaccia

  1. In a large bowl, combine flour, yeast and salt.
  2. Add in water and mix well until a dough is formed.
  3. Knead for about 1 – 2 minutes.
  4. Cover the dough with olive oil and damp cloth or plastic wrap.
  5. Allow it to rise in fridge overnight or 1 hour at room temperature.
  6. With wet hands, pull one side of the dough up and place on top of the rest of the dough, covering all the dough.
  7. Rotate the bowl 90° and repeat stretch and fold with a second side of the dough.
  8. Repeat until 4 sides have been stretched and folded.
  9. Allow to rest for 20 to 30 mins and repeat 3 more times.
  10. Turn the dough out into a baking sheet and work the dough out to each corner of the tray, leaving dimples in the dough from your fingers.
  11. Drizzle more olive oil onto the top of the bread, season with flaky salt and rosemary.
  12. Evenly cover the bread with the caramelised onions and allow to rest for 45 mins at room temperature.
  13. Preheat an oven to 200֯C Bake for 25 mins or until the top of the bread is golden and pillowy.
  14. Serve warm.
  15. To caramelise onions: Slice two onions into rings, Fry in a little oil or butter until the onions turn golden brown.
  16. Remove from heat and store in the fridge or use immediately.

  • 3 cups white bread flour
  • 5ml salt
  • 8g instant yeast
  • 300ml water
  • 15ml olive oil
  • Toppings: cheese, sesame seeds, rosemary, flaky salt, crushed dried chilies

How To Make Bread sticks

  1. In a large bowl combine flour & salt.
  2. Combine yeast, water and oil and mix until a dough is formed.
  3. Knead for 8 – 10 minutes.
  4. Allow the dough to rest for 45 minutes and double in size.
  5. Divide the dough into 35g. roll each ball into thin sausages and twist.
  6. Place twisted breadsticks into a greased baking sheet and top with your choice of toppings.
  7. Sticks can be rolled in some toppings to improve coverage.
  8. Bake 200 for 10 – 15 minutes until golden crispy.
  9. Store in an airtight container for a week or eat hot with a hummus dip or basil pesto dip.
