Rosé Musselpot with Sundried Tomato & Rosemary
Ingredients:
- 2 kilograms of fresh black mussels
- 1 large red onion, peeled and finely chopped
- Tablespoon olive oil, for frying
- 2-3 garlic cloves, finely grated
- 2 rosemary sprigs, leaves finely chopped
- 1x 125g sachet of sundried tomato pesto
- 250ml dry rosé wine
- 250ml cream
- Sea salt and black pepper
Tuna Steaks with Caper and Lemon Sauce
Ingredients:
- 2x Tuna Steaks (150g each) (Swordfish steaks can also be used)
- 1x Lemon
- 1 Large Garlic clove
- 1x Shallot
- 250ml Fresh Cream
- 8 to 10 Capers
- Salt & Pepper
- Fresh Flatleaf Parsley
- 125g Butter
Smoked Snoek Paté
Ingredients:
- 500g smoked snoek
- 1 x Shalot or small onion
- 125g plain full fat cream cheese
- 250ml cream
- 1 lemon
- Paprika
- Salt and pepper
- Brandy
- Serve on roosterkoek
