Rosé Musselpot with Sundried Tomato & Rosemary

Ingredients:
  • 2 kilograms of fresh black mussels
  • 1 large red onion, peeled and finely chopped
  • Tablespoon olive oil, for frying
  • 2-3 garlic cloves, finely grated
  • 2 rosemary sprigs, leaves finely chopped
  • 1x 125g sachet of sundried tomato pesto
  • 250ml dry rosé wine
  • 250ml cream
  • Sea salt and black pepper

Tuna Steaks with Caper and Lemon Sauce

Ingredients:

  • 2x Tuna Steaks (150g each) (Swordfish steaks can also be used)
  • 1x Lemon
  • 1 Large Garlic clove
  • 1x Shallot
  • 250ml Fresh Cream
  • 8 to 10 Capers
  • Salt & Pepper
  • Fresh Flatleaf Parsley
  • 125g Butter

Smoked Snoek Paté

Ingredients:

  • 500g smoked snoek
  • 1 x Shalot or small onion
  • 125g plain full fat cream cheese
  • 250ml cream
  • 1 lemon
  • Paprika
  • Salt and pepper
  • Brandy
  • Serve on roosterkoek
