Culinary Hotline - Talladega Grill

Part two of our food truck series and we have Shabier Parker from Talladega Grill in the kitchen!

Ingredients:

  • Leftover Rotisserie Chicken – shredded
  • Salsa – of your choice
  • Grated White Cheddar
  • Diced Jalapenos
  • Soft Tacos / Medium Wraps
  • To serve:
  • Guacamole
  • Sour cream

How To Make Pulled Chicken Taco

  1. Preheat a non-stick pan on the stove on medium to high heat.
  2. Place the soft taco on the pan to crisp up and top with grated white cheddar.
  3. As cheese begins to melt add pulled chicken and salsa and fold the soft taco over and flip.
  4. Garnish with diced jalapenos, serve with guacamole and sour cream.

Ingredients:

  • 100g macaroni, cooked al dante
  • 50ml homemade or store-bought cheese sauce
  • 20g French chives, chopped
  • 100 cheddar cheese, grated
  • 50g panko breadcrumbs
  • 100g brisket/chicken, shredded

How To Make Mac & Cheese with a twist

  1. Preheat your oven to 200°C.
  2. Mix the pasta, chives, and cheese sauce together in a bowl and transfer to a baking dish.
  3. Layer the chopped brisket / pulled chicken on top of the macaroni.
  4. Mix the yellow cheddar and panko breadcrumbs and layer it on top of the baking dish.
  5. Bake for 15 minutes or until cheese is melted and golden.

Ingredients:

  • 300g leftover steak
  • 4 hot dog buns
  • 100g provolone cheese / white cheddar
  • 100ml cheese sauce
  • 1 green pepper, diced
  • 1 large onion, diced

How To Make Philly Cheese Steak

  1. Add peppers and onion to a pan and sauté with any steak / braai spice of your choice.
  2. Preheat your oven to 200° C and grease a baking tray. Slice each hot dog bun vertically but not all the way through.
  3. Chop up leftover steak into fine strips and add to the pan with peppers and onions when the peppers and onions are almost cooked through, line each bun with the cheese sauce, then add the steak / peppers and onion mixture.
  4. Finally top with the grated cheddar or provolone cheese.
  5. Bake for 10 minutes or until the cheese is melted and golden.
