After all that festive spending, we could all use a little help when it comes to cooking up delicious meals on a budget. Enjoy these three incredible recipes that are easy on the wallet but big on flavour!

Ingredients:
- 2 Tbsp of your favourite seasoning
- 500g chicken pieces
- 200g rice
- 2 Tbsp oil
- 500g frozen peas
- 1 Tbsp garlic and ginger
- 1 diced onion
- 1 chili, chopped
- 500ml chicken stock
- Fresh coriander
How To Make One Pan Chicken & Rice
- In a large bowl mix together your chicken pieces along with 1 Tablespoon seasoning spice and 1 TBSP of oil and mix well.
- Add the chicken to a heated pan skin side down. Fry your chicken until it is halfway cooked.
- Remove the chicken from the pan.
- In the same pan add 1 TBSP of oil (if needed) along with your diced onion and chili.
- Once your onions are translucent add in your ginger and garlic and sauté for 60 seconds.
- Then add in your uncooked washed rice along with 500ml of chicken stock.
- Allow to cook on a medium heat for 10 to 15 minutes or until your rice is halfway done.
- Add back in your chicken along with the frozen peas and 1 TBSP of seasoning spice.
- Allow this to cook for a further 15 to 20 minutes or until your chicken and rice is fully cooked and your stock has cooked out.
- Finish off with some fresh coriander and enjoy.
Ingredients:
- 500g beef mince
- 2 large potatoes diced
- 150g frozen peas
- 1 large onion diced
- 2 chilies
- 1 TBSP garlic and ginger
- 2 bay leaves, 1/2 cinnamon stick, 1
- Star anise
- 1 tbs cumin seeds
- 1 TBSP olive oil
- 1 grated tomato
- 1 cup freshly chopped coriander
- 1 TBSP salt
Spices:
- 2 heaped tsp Kashmiri powder
- 1 TBSP chilli powder
- 1/2 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric
How To Make Mince Curry
- In a pot, heat up your oil and add in cumin seeds, bay leaves, cinnamon stick and Star anise.
- Once it’s starts to turn slightly brown add in your chopped onions and chili.
- Once your onion becomes translucent add in your garlic and ginger. Sauté for 30 seconds before adding in your spices.
- Toast your spices for 30 seconds then add in 1 cup of water. Cover with a lid and cook on medium heat. Once the water cooks out and you form a paste add in your grated tomato along with your chopped potatoes and 1 TBSP of fresh coriander. Add in 1/2 cup of water cover with a lid and allow your potatoes to cook until halfway done.
- Then you can add in your beef mince, along with the salt and 1 tbsp fresh coriander. Break up your mince and cook for 10minutes on medium heat.
- Add in the frozen peas and cook until your potatoes and peas are soft.
- Add in more salt if needed. Finish off with fresh coriander and enjoy!
Ingredients:
- 2 ripe bananas
- 1/4 cup oil
- 2 eggs
- 1/2 cup brown sugar
- 1 cup of flour
- 1 Tbsp cinnamon powder
- 1 tsp baking powder
- 70g dark chocolate chips
How To Make Chocolate Banana Loaf
- Pre heat your oven at 180 degrees Celsius.
- In a large bowl add in your Sugar along with your ripe bananas and mash your bananas into your sugar, then add in your eggs, oil and vanilla essence and whisk until all is well combined.
- Now you can add in your sifted flour, baking powder and Cinnamon powder – mix well.
- Add your mixture to a lined baking dish/ loaf pan and top your mixture with the dark chocolate chips.
- Bake this in the oven at 180 degrees for 20 to 30 minutes. You can remove this from the oven as serve it warm with a nice cup of tea.
- (Optional step) Allow your loaf to cool down completely and top with a vanilla frosting of your choice then serve and enjoy!
