Saucy Charred Chicken & Mushroom Pasta

Enjoy this saucy, charred chicken and mushroom pasta that’s sure to impress!

Ingredients:

  • 400g Chicken thighs
  • 1 Tbsp Smoked paprika
  • Salt pepper
  • 1 Tbsp Olive oil
  • 1 Tbsp butter
  • 1 tsp garlic
  • 200g sliced mushrooms
  • 1 TBSP fresh thyme
  • 1 cup non-alcoholic white wine or chicken stock
  • 250 ml fresh cream
  • 1/2 cup parmesan cheese
  • 1/4 cup fresh parsley
  • 300g cooked pasta of choice

How To Make Saucy Charred Chicken & Mushroom Pasta

  1. In a large bowl add your chicken thighs and season with smoked paprika, salt and pepper and olive oil. Massage into your chicken
  2. Add some olive oil to a pan and sear your chicken until fully cooked and you have a nice char on both sides of your chicken, then remove it from the pan.
  3. Then in the same pan add in your butter, garlic, thyme and mushrooms and sauté that down, then remove it from the pan.
  4. Then add in your non-alcoholic white wine and reduce until halfway. Add in your cream, once that comes to a boil add in salt and pepper along with Parmesan cheese, smoked paprika and fresh parsley.
  5. Then add back in your mushrooms and your cooked pasta along with more Parmesan cheese and mix well.
  6. Add your chicken back to your pasta, finish with fresh parsley and enjoy!
