
Saucy Charred Chicken & Mushroom Pasta
Enjoy this saucy, charred chicken and mushroom pasta that’s sure to impress!

Cooking time: 30 – 40 minutes
Ingredients:
- 400g Chicken thighs
- 1 Tbsp Smoked paprika
- Salt pepper
- 1 Tbsp Olive oil
- 1 Tbsp butter
- 1 tsp garlic
- 200g sliced mushrooms
- 1 TBSP fresh thyme
- 1 cup non-alcoholic white wine or chicken stock
- 250 ml fresh cream
- 1/2 cup parmesan cheese
- 1/4 cup fresh parsley
- 300g cooked pasta of choice
How To Make Saucy Charred Chicken & Mushroom Pasta
- In a large bowl add your chicken thighs and season with smoked paprika, salt and pepper and olive oil. Massage into your chicken
- Add some olive oil to a pan and sear your chicken until fully cooked and you have a nice char on both sides of your chicken, then remove it from the pan.
- Then in the same pan add in your butter, garlic, thyme and mushrooms and sauté that down, then remove it from the pan.
- Then add in your non-alcoholic white wine and reduce until halfway. Add in your cream, once that comes to a boil add in salt and pepper along with Parmesan cheese, smoked paprika and fresh parsley.
- Then add back in your mushrooms and your cooked pasta along with more Parmesan cheese and mix well.
- Add your chicken back to your pasta, finish with fresh parsley and enjoy!
