
Curried Boerewors Rolls

Serves: 4-6
Time: 40 minutes
Ingredients:
- 500g boerewors
- 4 tbsp oil
- 2cm ginger piece, grated
- 2 garlic cloves, grated
- 2cm turmeric piece, grated
- 1 birds eye chili, finely chopped
- 8 curry leaves
- 1 tbsp garam masala
- 2 tsp cumin
- 2 tsp coriander
- 1 can coconut milk
- 1 small cucumber, diced
- 1 red onion, chopped
- Juice of 1 lemon
- 6 hotdog rolls
- 6 tbsp butter, softened
- 1 cup crispy onion
- Fresh coriander
How To Make Curried Boerewors Rolls
- Heat a grill pan and brush with a bit of oil.
- Grill the boerewors until cooked.
- In a saucepan, heat to 2 tablespoons of oil.
- Add the ginger, garlic, turmeric, chilli and curry leaves and sauté for a minute.
- Add the garam masala, cumin and coriander and cook for further 1 minutes until fragrant.
- Stir in the coconut milk then allow the sauce to simmer until thickened and creamy.
- Season to taste
- Combine the cucumber, onion and lemon.
- Season to taste.
- To assemble, butter the hotdog rolls, cut the boerewors and place in the roll.
- Spoon the curry sauce over the boerewors, top with cucumber salsa, crispy onions and coriander.
