Curried Boerewors Rolls

  • 500g boerewors
  • 4 tbsp oil
  • 2cm ginger piece, grated
  • 2 garlic cloves, grated
  • 2cm turmeric piece, grated
  • 1 birds eye chili, finely chopped
  • 8 curry leaves
  • 1 tbsp garam masala
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 can coconut milk
  • 1 small cucumber, diced
  • 1 red onion, chopped
  • Juice of 1 lemon
  • 6 hotdog rolls
  • 6 tbsp butter, softened
  • 1 cup crispy onion
  • Fresh coriander

How To Make Curried Boerewors Rolls

  1. Heat a grill pan and brush with a bit of oil.
  2. Grill the boerewors until cooked.
  3. In a saucepan, heat to 2 tablespoons of oil.
  4. Add the ginger, garlic, turmeric, chilli and curry leaves and sauté for a minute.
  5. Add the garam masala, cumin and coriander and cook for further 1 minutes until fragrant.
  6. Stir in the coconut milk then allow the sauce to simmer until thickened and creamy.
  7. Season to taste
  8. Combine the cucumber, onion and lemon.
  9. Season to taste.
  10. To assemble, butter the hotdog rolls, cut the boerewors and place in the roll.
  11. Spoon the curry sauce over the boerewors, top with cucumber salsa, crispy onions and coriander.
