Deep fried Melktert Pannekoek

Ingredients:
- 8 ready-made pancakes
- 1L full cream milk
- 200g butter
- 180ml corn flour, plus 1 – 2 Tbsp water
- 180ml castor sugar
- 1 tsp salt
- 2 cinnamon sticks
- 1 Tbsp orange zest
- 2 eggs, beaten
- 2 cups coconut biscuits, finely crushed
- Oil for frying

- cinnamon sugar
How To Make Deep fried Melktert Pannekoek
- In a large saucepan add milk and butter over medium heat, once the butter has melted add sugar, mix until the sugar has dissolved.
- In a separate bowl combine corn flour and water, then add this into the milk mixture along with salt, cinnamon and orange zest.
- Whisk until the mixture is thickened and lump-free.
- Remove from the heat and set aside to cool slightly.
- Add about ½ cup of the filling mixture into each pancake, roll it up and secure it with a toothpick, place into the beaten egg, then roll in the crushed biscuits and deep fry until golden brown and crispy.
- Roll in cinnamon sugar and serve immediately.
