Deep fried Melktert Pannekoek

Ingredients:

  • 8 ready-made pancakes
  • 1L full cream milk
  • 200g butter
  • 180ml corn flour, plus 1 – 2 Tbsp water
  • 180ml castor sugar
  • 1 tsp salt
  • 2 cinnamon sticks
  • 1 Tbsp orange zest
  • 2 eggs, beaten
  • 2 cups coconut biscuits, finely crushed
  • Oil for frying

To serve:

  • cinnamon sugar

How To Make Deep fried Melktert Pannekoek

  1. In a large saucepan add milk and butter over medium heat, once the butter has melted add sugar, mix until the sugar has dissolved.
  2. In a separate bowl combine corn flour and water, then add this into the milk mixture along with salt, cinnamon and orange zest.
  3. Whisk until the mixture is thickened and lump-free.
  4. Remove from the heat and set aside to cool slightly.
  5. Add about ½ cup of the filling mixture into each pancake, roll it up and secure it with a toothpick, place into the beaten egg, then roll in the crushed biscuits and deep fry until golden brown and crispy.
  6. Roll in cinnamon sugar and serve immediately.
