Cheesy Mushroom Paptert

Cooking time: 35 – 40 minutes
Ingredients:
- 1.5L water
- 3 cups maize meal
- 1 tsp salt
- 1 Tbsp olive oil
- 1 onion, chopped
- ½ cup bacon, chopped
- 1 cup mushrooms, sliced
- 1 tsp cayenne pepper
- 2 tsp BBQ spice
- 2 cups cheddar cheese
- salt & pepper
For the tomato relish:
- 2 Tbsp olive oil
- 1 cup tomato, chopped
- ½ onion, chopped
- 1 ½ Tbsp sugar
- 1 ½ Tbsp white vinegar
How To Make Cheesy Mushroom Paptert
- Preheat oven to 180°C. Start by preparing the pap, add water into a large non-stick pot and bring to the boil.
- Whisk in the maize meal and cook over medium heat until the pap reaches a stiff consistency, then set aside and allow to cool.
- In a separate pan heat oil, add in onions and cook until the onions are translucent, then add in mushrooms along with spices and seasonings, add the onion and mushroom mixture into the cooked pap, then add in half the cheese and mix until well combined.
- Place into a greased baking dish, top with the remaining cheese and bake in the oven for 15 – 20 minutes until the cheese is golden brown and crispy.
For the tomato relish:
– Heat olive oil in saucepan, add in onions and cook until browned. Then add chopped tomatoes, sugar and vinegar. Simmer on low heat for 5 minutes and season to taste.
