Demi-Leigh Tebow’s Lamb Potjiekos

A potjie fit for a queen!

Preparation time: 15 – 20 minutes
Cooking time: 1 hour & 30 minutes

Ingredients:

  • 2 Tbsp olive oil
  • 1.5kg lamb pieces 
  • 2 large onions, sliced
  • 1 red pepper, sliced
  • 4 garlic cloves, minced
  • 3 carrots, peeled & chopped
  • 3 Tbsp potjiekos spice, or any seasoning of your choice
  • 2 large potatoes, peeled and cut into chunks
  • 1 large butternut, peeled & cubed
  • 1 tin diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef stock
  • Salt & pepper to taste

How To the Lamb Potjie

Add oil into a cast iron pot, once the oil is hot, add in lamb and brown on all sides, then add in onions, peppers and garlic allow this to cook for a few minutes until the onions are translucent. Add in potjiekos spice, tomato paste and cook for about 2 minutes, then add in tinned tomato and beef stock, cover and allow this to cook for 10 minutes. Add in carrots and butternut, cook until the meat and vegetables are tender, and stew has slightly thickened.
