Easy Fish Cakes

A budget-friendly, super easy recipe packed with fuel for your brain and body!

  • 1 tin pilchards of your choice
  • 1 onion, grated
  • 2 slices of bread, crumbed
  • 1 egg, beaten
  • 2 Tbsp oil, for frying
  • Handful parsley, finely chopped
  • Lemon, to serve
  • Salt and pepper, to taste
  • Sauce:
  • 2 Gherkins, finely diced
  • 1/3 Cup Mayonnaise
  • 2 Tbsp tomato sauce
  • Pinch of chill powder (optional)

How To Make 

  1. Shred the fish in a mixing bowl, add the crumbled bread, egg and parsley.
  2. Squeeze the water from the onion and then add it to the fish, mix well and season with salt and pepper. Shape into individual patties.
  3. Then in a medium heated pan, add some oil and cook the patties on each side until golden brown and set.
  4. To prepare the sauce, mix all the ingredients for the sauce together.
