Effortless ClemenGold® Roast Chicken
Dish up an effortless ClemenGold® Roast Chicken where tender and juicy chicken meets the brightness of this locally grown citrus.!

Ingredients:
Serves: 4 hungry people or 6 with sides
Total time: 1 hour 30 minutes, plus marinating time
For the chicken:
- 1 large chicken, gizzards removed, and washed and cleaned
- Salt and pepper, to taste
For the butter:
- 100g butter, softened
- 2 tsp minced garlic
For the marinade:
- ¼ cup olive oil
- 1 Tbsp smooth Dijon mustard
- 2 Tbsp honey
- 2-3 ClemenGold Mandarins, halved
- 1 lemon, halved
- 1 cup Woolworths chicken stock
- Freshly ground salt and black pepper
- For the vegetables
- 3 carrots, halved
- 10 baby potatoes
- 1 red onion, halved
- 1 bulb garlic, halved
- 2 sprigs each of fresh rosemary and thyme and sage
How To Make Effortless ClemenGold® Roast Chicken
- Preheat the oven to 180°C.
- Pat the chicken dry and place it into your dish (a 30 cm dish with high sides is ideal).
- Combine the butter and garlic together and press it under the skin of the chicken.
- To make the marinade, add the olive oil, mustard and honey to a jug. Squeeze the juice of 1 ½ of the ClemenGold Mandarins into the jug along with the juice of ½ lemon and the chicken stock. Give everything a good mix until well combined and pour it over and around the chicken.
- Stuff the chicken with half of the squeezed out lemon and ClemenGold skins and tie the legs together with string, Add the remaining ½ ClemenGold, the ½ lemon and the veggies around the chicken. Add the herbs in and amongst the vegetables and season everything well with salt and pepper.
- When the oven is ready, place the chicken in the centre of the oven, uncovered. Roast for 1 hour, spooning some of the juices over the chicken every 30 minutes. After 1 hour, lower the heat to 170°C and roast for a further 30 minutes. Slice the leg to see if the juices run clear.
- Once the juices run clear, remove the chicken from the oven and allow to rest for 2 minutes. Slice however you want, serve and enjoy with a side of roasted veggies or thick and crusty white bread to help mop up the juices.
