  • 1 red onion, halved
  • 1 bulb garlic, halved
  • 2 sprigs each of fresh rosemary and thyme and sage

How To Make Effortless ClemenGold® Roast Chicken

  1. Preheat the oven to 180°C.
  2. Pat the chicken dry and place it into your dish (a 30 cm dish with high sides is ideal).
  3. Combine the butter and garlic together and press it under the skin of the chicken.
  4. To make the marinade, add the olive oil, mustard and honey to a jug. Squeeze the juice of 1 ½ of the ClemenGold Mandarins into the jug along with the juice of ½ lemon and the chicken stock. Give everything a good mix until well combined and pour it over and around the chicken.
  5. Stuff the chicken with half of the squeezed out lemon and ClemenGold skins and tie the legs together with string, Add the remaining ½ ClemenGold, the ½ lemon and the veggies around the chicken. Add the herbs in and amongst the vegetables and season everything well with salt and pepper.
  6. When the oven is ready, place the chicken in the centre of the oven, uncovered. Roast for 1 hour, spooning some of the juices over the chicken every 30 minutes. After 1 hour, lower the heat to 170°C and roast for a further 30 minutes. Slice the leg to see if the juices run clear.
  7. Once the juices run clear, remove the chicken from the oven and allow to rest for 2 minutes. Slice however you want, serve and enjoy with a side of roasted veggies or thick and crusty white bread to help mop up the juices.
