Flower Butter

Ingredients:

  • 2 Cups Clover Mooi River Premium Butter (softened)
  • Lemon or orange zest (1-2 teaspoons)
  • Variety of edible flowers and herbs
  • Parchment paper
  • Stand mixer
  • Fresh bread for serving

How To Make Flower Butter

  1. Prepare the Butter Mixture:
    In a mixing bowl, combine the softened butter with the lemon or orange zest.
    Mix thoroughly until the zest is evenly distributed throughout the butter.
  2. Shape the Butter Log:
    Place a sheet of parchment paper on a flat surface.
    Spoon the butter mixture onto the parchment paper, forming a log shape.
    Roll the parchment paper tightly around the butter log, twisting the ends to seal it.
    Place the rolled butter log in the refrigerator to set, typically for 1-2 hours.
  3. Prepare the Flower and Herb Carpet:
    Lay out another sheet of parchment paper on a flat surface.
    Evenly spread a variety of edible flowers and herbs across the parchment paper, creating a colourful carpet.
  4. Roll the Butter in Flowers and Herbs:
    Once the butter log is set, remove it from the refrigerator and let it come to room temperature for a few minutes.
    Unwrap the butter log from the parchment paper.
    Gently roll the butter log over the carpet of edible flowers and herbs, pressing lightly to ensure the flowers and herbs adhere to the butter.
  5. Chill the Butter Log:
    Carefully wrap the butter log in a fresh sheet of parchment paper, ensuring the flowers and herbs remain in place.
    Place the wrapped butter log back in the refrigerator to chill and set once more, usually for 1 hour.
  6. Serve:
    When ready to serve, unwrap the butter log and place it on a serving dish.
    Slice the flower butter and enjoy it on fresh bread, adding a beautiful and flavourful touch to your meal.
