Fragrant Chicken Curry
It’s fragrant, it’s golden, and it’s a dish that belongs to every South African table.
Ingredients:
- 8-10 pieces of chicken (most skin removed)
- 3 tbsp oil
- 3 onions, peeled and finely chopped
- 3 cardamom pods
- 3 cinnamon sticks
- 2 bay leaves
- Salt to taste
- 6 cloves of garlic, peeled and grated or finely chopped
- 1-2 tsp freshly grated ginger
- 1 heaped tsp turmeric
- 2-3 heaped tbsp roasted masala
- 1 tsp red chili powder
- 1 tbsp vinegar (optional)
- 1 tsp sugar (optional)
- 5-6 potatoes, peeled and quartered
- A bunch of fresh coriander
To serve:
- rice, roti and slaai
How To Make Fragrant Chicken Curry
- In a large pot, heat the oil and add the onions, cardamom, bay leaves, and cinnamon sticks. Cook and stir on medium heat for 25-30 minutes, adding a tablespoon of water every 5 minutes until the onions are golden brown and soft.
- Add the salt, vinegar, sugar, garlic, ginger, and the rest of the spices (turmeric, masala, chili powder). Stir well.
- Add the chicken and potatoes and stir a few times to coat in the spice mixture. Add 1 ½ cups of water, give it one stir, and put the lid on the pot.
- Cook on medium heat for 20-25 minutes or until the potatoes are cooked through, stirring occasionally.
- Finish by adding fresh coriander and serve with rice, roti, and slaai.
