Game Day Mini Kebab Burgers

Stacked, packed, and ready to snack.

Serves: 4–6 (Makes about 12–15 mini kebab burgers)

Ingredients:

  • 1 packet (500 g) Woolworths Frozen Crispy Potato Rostis (prepared according to package instructions until extra crispy)
  • 500 g Lean Beef Mince
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika
  • Salt and freshly ground black pepper to taste
  • 3–4 slices Cheddar cheese, cut into small squares (to fit the mini patties)
  • 1 jar Gherkins/Pickles, sliced into thick rounds
  • Tomato sauce (for drizzling)
  • Robust wooden skewer sticks (cut in half if they are too long)

How To Make Mini Kebab Burgers

1. Cook the Potato Rostis in the oven or air fryer according to the packet instructions. You want them deeply golden and structurally firm so they hold up perfectly on the skewers. Set aside to cool slightly handling.

2. In a bowl, mix the beef mince with the garlic powder, onion powder, smoked paprika, salt, and black pepper until fully combined. Place the seasoned mince directly onto a large sheet of baking paper. Top with a second sheet of baking paper. Using a rolling pin or the palms of your hands, flatten the meat evenly between the paper until it is about 1cm thick. Remove the top sheet of paper. Using a sharp knife or pizza cutter, cut the flattened mince into neat, even squares—aiming for roughly the same diameter as your cooked potato rostis.

3. Heat a griddle pan or large skillet over high heat until smoking hot. Carefully lift the mini square patties off the paper and grill them for 2–3 minutes on each side until nicely charred and cooked through. Just before removing them from the heat, place a small square of cheddar cheese on top of each patty, letting it melt slightly from the residual heat.

4. To assemble your game-day skewers, thread the ingredients onto each stick in the following order:

      1. Base: One hot, crispy potato rosti.
      2. The Burger: A cheese-topped mini square patty.
      3. The Sauce: A good drizzle of tomato sauce.
      4. The Crunch: A thick pickle slice.
      5. The Crown: Finish with a second crispy potato rosti on top.
      6. Serve immediately while hot, stacked on a platter for the ultimate bite-sized game day feast!
