Gammon à l’Orange with Marmalade Glaze and Orange Flambé
The must-have christmas dish!
Ingredients:
- 500 g cooked gammon sliced into neat serving slices
- 2 tablespoons Seville orange marmalade
- 1 tablespoon neutral cooking oil
- 30 g unsalted butter
- Zest of 1 orange
- 180 ml fresh orange juice
- 60 ml orange liqueur with brandy as a suitable substitute
- 1 teaspoon Dijon mustard
- 1 tablespoon honey or brown sugar
- 120 ml chicken stock
- 2 to 3 sprigs fresh thyme
- Freshly ground black pepper to taste
How To Make Gammon à l’Orange with Marmalade Glaze and Orange Flambé
- Preheat the grill to a high setting
- Arrange the sliced gammon neatly in a single layer on an oven proof serving dish
- Lightly brush the gammon with the Seville orange marmalade ensuring an even but not
heavy coating - Place the dish under the grill and allow the gammon to heat through and caramelise lightly on the edges then remove and keep warm
- Heat a wide pan over medium heat and add the neutral cooking oil
- Add the butter and allow it to melt and foam gently
- Add the orange zest and warm briefly to release its oils
- Pour in the fresh orange juice and allow it to reduce until slightly syrupy
- Add the orange liqueur and carefully flambé allowing the flames to burn off naturally or use brandy as a pantry friendly substitute
- Once the flames subside stir in the Dijon mustard and honey or brown sugar
- Add the chicken stock and thyme and simmer until glossy and well balanced
- Season with freshly ground black pepper
